Everything's Peachy Keen!

Looking into my pantry with bewilderment, I found a cake mix and some canned peaches.  Along with a few other ingredients, I came up with this great dessert.  Who says you have to have a recipe?


Peachy Keen Bars 

1 pkgdry cake mix-white, yellor or french vanilla
1/3 cbutter, room temperature
2 lgeggs, divided
29 ozcan light peach slices, drained
8 ozcream cheese, room temperature
1/3 csugar
1 tsppure vanilla extract

 Preheat oven to 350 degrees.
Spray a 9x13” pan with nonstick cooking spray.

 In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly.
Set aside 1 ½ c. crumbs for topping.

 Press the remaining crumbs on bottom of prepared pan; Bake 10 minutes.

 Cut peach slices into 1” pieces; Spoon onto partially-baked crust.

 In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy.
Spread over top of peaches.

 Sprinkle with reserved crumbs; Bake 30 minutes.

 Chill at least 30 minutes before serving; Serves 12.
Store leftovers in refrigerator.

  6. Paula, I am laughing out loud at myself because I downloaded your recipe but only the picture and part of the recipe was printed. It was in a stack of printed off recipes on my bedroom floor. Well I took it out as it looked so good but had to google it to find the rest of the recipe. Your website was not on it. And I found it on a blogsite that featured it. It was a round about way of finally getting the recipe and making it. And I'm so glad I did. It was fabulous and a big hit. I cut it into 24 bars though. I'm taking a dozen of them to a luncheon tomorrow for dessert. My sons in law both loved them and so did my husband.
